Tulane provides the Office of public Health with technical assistance to conduct nutrition assessments among disadvantaged populations in Louisiana. Included in those activities are measuring hunger in low-income populations, assessing dietary practices related to household structure and poverty to growth among the poor. This project offers students the opportunity through coursework to learn hands-on assessment techniques.
